Pumpkin Cake - made for feeding a crowd

The message of the week goes to reader Suzanne on the Wednesday's recipe [How I Cook Frozen Peas]( - "Did I really click to watch “how to cook frozen peas”? …….and then save it?" 😂 It's firmly planted in the top 10 new recipes for 2023! Today's pumpkin cake is a little more involved than ripping open a bag of frozen peas but it is one of my easiest cake recipes and certainly one of the most foolproof. Nothing gives cakes that warm orange glow and soft springy texture like pumpkin!
