I pride myself on taking a lot of care with recipes to make sure they work as promised. But upon re-making this maple roasted pumpkin that I published waaaay back in 2015 when I first started out, I'm embarrassed to say it needed improvement! 1 onion not 2 (too oniony). 1 1/2 tsp of chilli flakes, not 3 (OMG too spicy!). Don't throw the pumpkin seeds on the tray, they just don't cook in time! Need more feta and more salt, and more walnuts. Fixed it, republished it, and filmed a recipe video with me and Dozer in it. I hope you love the new and improved recipe as much as we do!
