Oatmeal Raisin Cookies and Postcard #3 from Tasmania!

Greetings from the Foodie Trail in Tasmania! At the time of writing this, we're halfway through the Tasmanian Foodie Trail taking a break after a "hectic" few days immersed in the Dark Mofo event in Hobart and spending time on Bruny Island. {In case you missed it, click here for [Postcard #1]( and [Postcard #2]( for updates!} From Hobart on the south of Tasmania, we headed up north in the direction of Launceston via the coast for some sight seeing and enjoying the spectacular natural beauty that is Tasmania. We stayed at a place called Piermont Resort in Swansea, about 2 1/2 hours north of Hobart in a famous region called Freycinet National Park. Set right on Wine Glass Bay in rustic cottages, this part of the trip was planned to be a bit of downtime to relax and unwind. I realise how ridiculous that sounds being on a foodie trail trip, but our schedule has actually been rather hectic!! Long days and very little time to relax, especially when someone didn't manage to get all her work done before she left Sydney so she's still editing photos and writing posts on the road, frantically getting her team back in Sydney to do last minute recipe testing to double check things before she hits PUBLISH while in the car on the highway (yep, that's how most recipes this week were published!!) This resort has a wonderful restaurant which is exclusively reserved for hotel guests. As with every other restaurant and even little countryside cafes we've been to here in Tassie, it showcases local seasonal produce. I really enjoyed this restaurant - the dishes were unique and the ambience was great. Not a bad way to finish dinner - cocktails by the fire!!! And look Ma! I actually stopped eating and did some more exercise!!! This is in Frecyinet National Park. The walk was a little more tame than we expected, so we decided to go "off piste" and do our own exploring!! Relaxation time done, we're back to work on the food trail!
