Chocolate Mirror Glaze Cake - spectacular!

The Mirror Cake in the photo below is the 2nd time I ever made a Mirror Glaze Cake in my life. YES it is so much more straightforward than you think!!! Especially now that I've made it many (many!) more times so I could make mistakes, figure out the danger zones, and bring it to you risk free. :) And if you're wondering how on earth I managed to nail it on Attempt #2 - it's because I've been getting baking coaching from a professional pastry chef who's worked in some of the best restaurants in Sydney.
