To begin, melt the butter and sauté your onions and a little bit of thyme in a pot. Cook until the onions are translucent, then add in the flour to make a roux. Add in your cubed potatoes, broth, and milk, and simmer for about 15 minutes until the potatoes are cooked. Once the potatoes are tender, stir in the sour cream and cheddar cheese and season with salt and pepper. You can also mash the potatoes if you like.
