One of my go-to weeknight meals is a Layered Enchilada Casserole. This recipe starts by cooking ground beef with taco seasoning until itâs nice and brown, then add in black beans and enchilada sauce. Once thatâs ready, youâre going to fill your tortillas with sour cream and your ground beef mixture. It only needs about 20 minutes in the oven.
The best part? Itâs a casserole, so you can layer the enchiladas, then slice and serve it straight out of the baking dish!
In the class, Iâll share a few more tips on putting your enchiladas together and how to get them into your baking dish without falling apart. I hope, like me, youâll love that this absolutely awesome enchilada recipe comes out of the oven layered like a lasagna and only takes about 40 minutes from prep to plate!
