DAILY TRADER’S INSIGHT
Without further ado, let’s dive into a smorgasbord of vegan offerings you can include in your Thanksgiving feast.
Tofurkey That Actually Tastes Good
Tofurkey is a great way to get that Thanksgiving taste while staying healthy.
But let’s be honest — Tofurkey can be a bit on the boring side.
- 1 Tofurkey, thawed
- 1 tbsp olive oil
- 1 tsp thyme, stems removed
- 1 tsp sage, thinly chopped
- 1 tsp oregano, thinly chopped
- 1 garlic clove, minced
- 1 tsp soy sauce
- 1 tbsp Italian seasoning
1. Preheat oven to 350â
2. Mix together all seasonings and herbs for the baste.
3. Take half of the baste and cover your Tofurkey. Get messy and give it some love. Massage the seasoning all over it.
4. Cover dish tightly with foil and put it in the oven for 1 hour and 15 minutes. Around 1-hour start checking the color. When your Tofurkey is golden brown, it’s time for the next step.
5. Add the rest of the baste to the Tofurkey and cook for 10 to 15 more minutes.
Grandma’s Rosemary Stuffing
- 1 loaf of sourdough
- 5 stalks of celery, thinly sliced
- 6 garlic cloves, chopped
- 1 large onion, thinly sliced
- 3 tbsp olive oil
- 2 cups vegetable stock
- 1 tsp dried thyme
- 2 tsp fresh rosemary, finely chopped
- ½ ground sage
- 3 tbsp parsley
- Kosher Salt to taste
1. The day before you make your stuffing, slice bread into cubes 1 inch in size. Leave out to dry out.
*If you forget this step, place chopped bread in the oven at 200â for 20 minutes.
2. Preheat oven to 350â and grease a 3-quart baking dish with a bit of olive oil.
3. Heat olive oil in a large pan, add onions, and cook for 5 minutes. Next, add celery and garlic. When celery is cooked, add vegetable stock. Season with salt and pepper.
4. In a large bowl, combine all ingredients, reserving 1 tbsp of parsley.
5. Transfer stuffing into the greased baking dish and cover with foil. Bake for 40 minutes.
6. Remove foil and bake 30 to 35 minutes more until the top is crisp and golden brown.
7. Last, sprinkle with remaining parsley.
Energy Boosting Southern Greens
- 2 lb kale, washed
- 2 lb collard greens, washed
- 1 small red onion, chopped
- 2 garlic cloves, chopped
- ½ tbsp white vinegar
- ½ tbsp balsamic vinegar
- 2 tbsp olive oil
- ½ to 1 tbsp crushed red pepper
- Salt and pepper to taste
1. Remove the tough stems from all greens. Cut leaves thinly. You don’t want huge chunks of kale on your plate.
2. In a large pot, heat olive oil on medium and add the onion. Cook until golden brown.
3. Add greens, garlic, red pepper, vinegar, and ½ cup of water. Cook until greens are tender, about 20 to 25 minutes. If the greens start looking dry, add about ¼ cup more water.
4. When greens are done, add salt and pepper to taste.
Creamy But Vegan Mashed Potatoes
- 3 lb. golden potatoes
- 2 garlic cloves, chopped
- 1 tsp olive oil
- 5 tbsp vegan butter
- ¼ cup nut or oat milk of choice
- 3 tbsp green onions, chopped
- 1 tbsp kosher salt
- Salt and pepper to taste
1. Place potatoes in a large pot, add kosher salt, and cover in water. Bring to a boil and cook until soft and tender, about 15 to 20 minutes.
2. When potatoes are done, drain and mash until smooth. Add milk replacement of your choice and mix it in.
3. In a small saucepan, heat olive oil. Add garlic and sauté until fragrant. Add vegan butter till melted. At the last minute, lightly toss half of the green onions into the mixture.
4. Add butter and garlic to potatoes and stir until creamy.
5. Add salt and pepper to taste and top with remaining green onion.
Glazed Roasted Carrots
- 2 lb carrots
- 2 tbsp olive oil
- ½ tsp salt
- ½ tsp smoked paprika
- ½ tsp garlic powder
- 2 tbsp parsley, finely chopped
- Pepper to taste
1. Preheat oven to 425â. Peel carrots and remove tops. Slice carrots diagonally, about ½ inch thick. Make sure carrots are all a similar size.
2. Place carrots, olive oil, and seasoning in a bowl. Toss until carrots are well covered. Do not add parsley yet.
3. Spread carrots onto large sheet pan taking care that there is only one layer. Roast in the oven for 10 minutes.
4. Remove carrots from the oven. Flip carrots and put back into the oven for 10 to 15 more minutes or until tender.
5. Toss carrots in parsley and serve.
Cranberry Sauce With A Twist
- 1 lb fresh or frozen (thawed) cranberries
- ½ organic apricot preserves
- ½ cup dried apricots, quartered
- 2 naval oranges
- ½ cup of sugar or preferred sugar substitute
1. Using 1 orange, zest 2 tsp into a medium-size saucepan. Then juice both oranges, should yield around 1 cup of juice.
2. Add cranberries, preserves, apricots, sugar to the pan.
3. Let simmer, stirring occasionally until cranberries burst and the sauce becomes thick. Estimate 15 to 20 minutes.
