Easter is another major Christian holiday. It marks the Resurrection of Jesus Christ three days after his death by crucifixion. For many Christians, Easter is the joyful end to the Lenten season of fasting and penitence. We know that Easter is a time when we get together with family and friends and enjoy some good food. So, in today's holiday special, we will be sharing some pretty cool African continental dishes that you can prepare during the Easter celebration. We hope that you enjoy this newsletter as much as we enjoyed putting these dishes together! 1.) Ugali, Kenya Ugali is Kenya's most famous dish. It is made from maize flour, or cornmeal poured into boiling water and consistently mixed until it thickens and reaches a dough-like consistency. Similar to what we Nigerians call "swallow". It is usually served with stew or soup containing several pieces of meat or fish. 2.) Piri piri chicken, Mozambique This Mozambique’s cuisine is a heady blend of African, Portuguese, oriental and Arab flavors. It is generally known simply as grilled chicken piri piri by tourists, and is traditionally served with matapa, a dish of cassava leaves cooked in a peanut sauce. 3.) Jollof rice, Nigeria It’s not easy to choose a national favorite dish for Nigeria because it is a vast country with several distinct local cuisines. However, one Nigerian dish you just have to try is jollof rice. It is a West African favorite, and one that is thought to have originated from the Cajun dish jambalaya. 4.) Matoke, Uganda Without an iota of doubt, this is one of the most famous traditional Ugandan dishes. It is prepared with chicken stew and green bananas, seasoned with different spices. The dish has a delicious flavor and is quite easy to get wherever you find yourself in the country. 5.) Kapenta with sadza, Zimbabwe A heap of crisp-fried kapenta is the culinary highlight for many visitors to Zimbabwe. It is often accompanied by a mountain of delicious maize porridge, known in Zimbabwe as sadza. Kapenta is available both dried and fresh, and is also stewed with tomatoes, onions and groundnut powder, and served with fresh greens. So, which of these African continental dishes caught your attention? For me, it'll be Kapenta with Sadza.
