The crowd size has fluctuated from as few as five to as many as 12. I've wet-brined turkeys, dry-brined them, fried them and slathered them in butter, both over and under the skin. I even cooked one on the grill in a cast iron pan when I realized the second breast wouldn't fit in the oven in our new house. And we haven't even gotten to the sides. Or appetizers. Or dessert. I'm not going to bother you with all the details of 10 years of hosting the holiday, but I feel like at this point I've gathered enough experience to know what I'm doing.
