I just kept tweaking the recipe until it was exactly how I wanted it.  This Sweet Potato Pie makes a puree from fresh sweet potatoes, then adds in vanilla, cinnamon, nutmeg, and dark brown sugar. This pie cooks up smooth and oh-so-creamy, but it has a lovely crunch thanks to the diced almonds in the vanilla crust!  It really is a lovely pie to bring to a small holiday gathering. My husband and I had three pressure cookers running at different times, and we both split time in the kitchen and with the kids. It was a lovely day with great food and lots of laughter.  However, before the dust completely settles on the Thanksgiving weekend, I wanted to thank each of you for your kindness and support. It was a super exciting day for her, with a much higher than usual number of dropped kitchen scraps and lots of people coming and going to various dinners.  We learned that she really loves sweet potatoes.
