Instant Pot Mexican Pinto Bean Soup (Charro Bean Soup) packs just the right amount of heat and is full of healthy protein in a rich and flavor-packed tomato-beer broth. It’s called the Electric Pressure Cooker Soup Cookbook, and it’s full of similarly delicious soups and stews to make in a pressure cooker. This recipe is called Mexican-Inspired Charro Bean Soup and can be found on page 52 of the new cookbook. It’s a riff on the author’s favorite Tex-Mex soup recipe, and it packs some serious spice. But I loved this statistic: over 58% of survey respondents use their pressure cookers at least weekly. HOWEVER, when you narrow it down to the people who took a month or longer to get it out of the box, only 11% use their Instant Pot at least weekly. Were you surprised at this? I really was! I had assumed that once people unboxed it, they'd fall in love with it. But it looks like so many people don't move past the intimidation and overwhelm.
