Yes, it is. This recipe is a DIVA in the best way! Itâs so gorgeous and fun to eat with all of its layers. Salty cotija cheese, a sour cream drizzle, fresh cilantro, and those crispy corn fritters (seriously so good) on top of a very simple pinto bean soup called Sopa Tarasca. The soup itself is smooth and creamy, so any leftovers can be repurposed for a taco simmer sauce or sauce for enchiladas! I was first introduced to Sopa Tarasca by [this video on YouTube]() from Pati Jinich! This soup originated in the Michoacán state of Mexico and was given the name in honor of the indigenous peoples of that area, the Purépechas or Tarascos. This version modifies the ingredients to what is more readily available for me and, of course, adds the corn fritters! --------------------------------------------------------------- Don't Miss This Week!
