I’m sitting here in my fleecy zip-up thinking about all that the next week holds – the last few 65-degree days until spring, a yard full of crunchy leaves, and a big box of Halloween costumes – but mostly I NEED YOU TO KNOW ABOUT THIS WEEK’S NEW RECIPE. As a proudly unfancy person, these [Salted Caramel Rice Krispie Bars](=) are a top tier dessert in my book. RKBs in general don’t get me all that excited, but these are a whole other thing. I am truly unstoppable with them. Here are some of my favorite recipes for the pre-Halloween, headed-towards-holidays, last week of October (featuring the RKBs)! --------------------------------------------------------------- New and Noteworthy! [Rice krispie bars on a pink background](=)​ Salted Caramel Rice Krispie Bars This is one of those classic case examples of “it doesn’t have to be fancy to be delicious,” – and by delicious, I mean I actually can’t stop eating them. I adore these Rice Krispie Bars (RKBs, as I call them) because they contain the best of the classics, but just dialed up. Turning the butter into that salted caramel gooeyness just DOES SOMETHING. In my experience, these make the perfect week-of-Halloween munchie to keep things light, fun, playful, and nostalgic. [Get the recipe](=) [Roasted broccoli salad with cheese, bacon, and lemon](​ Liz's Roasted Broccoli Salad This zippy roasted broccoli from my friend Liz truly changed my life – it’s the one way I can think of to eat broccoli and just keep wanting to go back for seconds, thirds, and beyond. The feta, the lemon zest, the bacon, the garlic, the sourdough croutons? Ugh. You can serve this as a side with an easy protein (think rotisserie chicken, meatballs, or sheet pan sausages), but I have also been known to frequently eat this as its own meal. [Get the recipe]( [Pumpkin spaghetti in a bowl with kale and a fork](=)​ Creamy Pumpkin Spaghetti with Garlic Kale Like regular spaghetti but with a fall-ish upgrade. I love this recipe, and for some reason it’s become a week-of-Halloween staple for us over the years. The sauce is like a normal spaghetti sauce but a little more creamy, and yes, there’s pumpkin in there, too! Fun, classic, family-friendly, must-go-back-for-seconds type of meal. They’re so delicious that I will eat them for breakfast, snack, and dessert all in one day – AND they’re wholesome enough that I feel good feeding them to my girls and knowing they’ll stay full and happy for a while (oats, dates, apples, olive oil, eggs).
