We have a 55-degree breeze coming in through the open window, the smell of an early evening bonfire, and colorful leaves all around us. It's magical. It's why we love Minnesota. This week is the last week of our SOS series – and holy smokes, it's been a mega delicious run! The five new recipes in this series were: - [Ginger Peanut Chicken](), which I've been seeing from so many of you on Instagram <3 - [Cauliflower Black Bean Tostadas](), the ones loaded with the queso (!!) - [Cauliflower Orange Gnocchi](=) a la Bar La Grassa - [Instant Pot Pasta and Meatballs](, which we call "spaghetti bites" - And today's new recipe: [Sesame Apricot Tofu]( As we wrap up the series, [here is the full list of recipes]() in our complete SOS series collection if you ever find yourself having an SOS time getting dinner on the table and want to grab some last-minute-ish inspiration. We love last-minute in this series! The featured recipes in this week's email include some SOS medal winners from past rounds, a crunchy and delicious sando featuring melty Provolone, giardiniera, and tender Italian beef (omg), a five-star pancake recipe that originated with my husband Bjork, and the deep dish cookie situation that we make on the reg through the colder weather months for cozy nights watching TV on the couch after the girls go to bed. Livin' the dream! I'm in full Minnesota Fall Mode so if you're thinking the next couple weeks post-SOS series are going to be chock-full of soups and baking, you would be very, very right. BUCKLE UP, FAM. Full steam ahead! --------------------------------------------------------------- New Today! [White hand holding a bowl of sesame apricot tofu with green beans and rice]( Sesame Apricot Tofu This is my latest tofu obsession, and the best part of this recipe is that you get to pull the tofu apart with your hands! No, wait, the best part about it is that you get to eat it in all its saucy, sticky, crunchified glory. The cornstarch coating makes the tofu fry up extra crispy, and then the quick savory-sweet apricot sauce goes right into the hot pan to sizzle, swish, and transform those little tofu nuggets into something that kind of resembles takeout Asian-style fried chicken. But in a distinctly different and tofu-y way? I love this with rice and buttered, salted green beans (my girls are VERY into green beans right now so we're going with it), but you can keep it even more SOS by just throwing some spinach into the pan at the end! Time savers FTW! [Get the recipe]( --------------------------------------------------------------- This Week's SOS Extras Some of our tried-and-true weeknight favorites we're revisiting this week! [Meatballs in a bowl with feta, peppers, pita, olives, hummus, and zucchini](=) Harissa Meatballs with Whipped Feta This one was your favorite recipe from our past SOS series! The harissa mixture takes store-bought meatballs and makes them into something zippy and fun, and the swoops of whipped feta to balance it all out? If you know, you know. [Get the recipe](=) [Chipotle shrimp in a bowl with rice and cucumbers](=) Chipotle Orange Shrimp Trust! That creamy orange chipotle sauce is so mysteriously delicious, and it goes great with a little fresh cucumber salad if you have any end-of-summer garden cukes waiting for their moment to shine! This was my favorite from our original SOS series back in 2021. [Get the recipe](=) --------------------------------------------------------------- Instant Pot Love The Instant Pot is our favorite little (big) tool to get the dinner job done on those weeknights where you have very few hands and very little time. Here's another one of our favorite recipes that feels like magic! [Italian beef sandwiches with au jus on parchment paper]() Instant Pot Italian Beef Never not craving these easy sandwiches, and they're great for a busy weeknight. The beef itself is tender and delicious, and when you pile it on crusty bread and cover with melty provolone and crunchy giardiniera, it becomes Sandwich Hall of Fame material. (This recipe was originally sponsored by DeLallo) [Get the recipe]() --------------------------------------------------------------- A Little Something Fun Because we all need an extra little pick-me-up to make it to Friday! [Spoon scooping bite out of cookie bowl with ice cream on top]( Deep Dish Cookie Bowls for Two Perfect for when you definitely do need a chocolate chip cookie, but you don't need a whole batch, but DO NEED A COOKIE (which is, honestly, always). These are just begging to be eaten cozied up on the couch with a thwap of melty vanilla ice cream on top! Ultimate treat-yourself material. [Get the recipe]( --------------------------------------------------------------- Raving Comment of the Week Just so you don’t think it’s ONLY us gushing on and on about delicious things… [Blueberry pancakes with butter on top]( "Without reservation, I will say that these are the best pancakes I've ever made. Perfect texture, just the right balance of tanginess (?) from the buttermilk and the sugar in the batter, so topping them off with maple syrup didn't make them overly sweet. Thank you for this recipe!" - Linda on [Fluffiest Blueberry Pancakes]( --------------------------------------------------------------- What You're Cooking on Instagram We love (like, LOVE) to see what you're making! Tag [@pinchofyum](=) so we can see your creations. â¤︠= = This Week's Insta Features: - @carainthekitchen: [Instant Pot Cauliflower Curry](=) - @good.chives: [Quick and Easy Spiced Chickpea Bowls]( - @carebear21913: [Lemon Chicken Soup with Orzo]( - @sarahlee.chowing: [Life Changing Instant Pot Beef Stew]() - @genzwhocooks: [Anything-You-Have Coconut Curry Soup]() - @brokegirltable: [Pickled Strawberries](=) --------------------------------------------------------------- Cheers to really, really good eats! - Lindsay Keep exploring!
