Sopa Tarasca (âTarascan soupâ) originated in the Michoacán state of Mexico and is made with tomatoes, garlic, onion, and also fresh or dried chilis native to that region, which help give it its warm smoky flavor. We made a couple slight swaps based on ingredient availability (like using ancho chili powder instead of fresh or dried chilis) and some flavor preferences (a little extra cumin for us!) to come up with this cozy nod to a more traditional Sopa Tarasca. The real star ingredient here though is our favorite little friend, pinto beans! They get blended up and added in to thicken this whole simple smoky masterpiece into the most velvety, rich bowl of magic you ever did swoop your spoon through. And we are NOT PLAYING with the toppings â cotija cheese, fresh cilantro, Mexican crema drizzles, and the most perfectly crisp, salty, sweet, spicy, melt-in-your-mouth jalapeño corn fritters that you can whip up in a flash. Good luck trying to stop eating this once you start.
