[Thai Coconut Soup with Tofu and Rice]()​ Hi {NAME}, If you are at all familiar with the delicious Thai soup, Tom Kha, then you know how life-changingly good it is. Creamy, coconut-y, just a bit of spice, and piles of bright kicky flavor. Traditional Tom Kha is made with galangal (a sort of ginger-adjacent root vegetable), fresh lemongrass, kaffir lime leaves, and Thai chilis to build the flavor-base. Some of those ingredients are trickier to find in our go-to grocery stores, so we made a few swaps - like ginger, lime zest, and red chili paste, to come up with this nod to the soup we love. We made it with tofu, tons of bright red peppers, and earthy mushrooms, but it is super flexible with whatever proteins and veg you might like. You would NOT be wrong to ladle all that over a steamy pile of rice and then shower it with lime squeezes and fresh cilantro and a drizzle of chili oil on top.
