Between the long weekend, a trip to Mexico (more on that below), and all the end-of-the-school-year things, weâve been busy! This week Iâm sharing my latest favorite Costco buy, a quick recap of a trip to Mexico with friends, and the Egg Tostadas Iâm making on repeat since I got home. --------------------------------------------------------------- A New Favorite Granola [Lemongrass chicken in a bowl with crispy zucchini and brown rice.]() I got this Purely Elizabeth Vanilla Chocolate Chip Granola at Costco recently and it is SO GOOD. I have tried their other flavors and theyâre pretty good, but this one is officially my favorite and it has been added to our Costco essentials list! Itâs also sold at [Target]() (affiliate link). Itâs my new go-to for [cookie bowls]()! --------------------------------------------------------------- We Went To Mexico! [Stuffed panda in front of a plate of gochujang burgers and salad.]( Last week, we went to Mexico with our very good friends (my bestie from college and her husband, our videographer for POY)! â¤ï¸ We stayed at an AMAZING all-inclusive resort in Riviera Maya called Grand Velas and spent three days by the pool, eating amazing food, and just generally enjoying the tropics. [Hereâs a little recap of our trip]( - itâs a super fun destination for a special occasion getaway or trip. And yes, unlike many all-inclusives, the food is actually very good! One of the restaurants was even awarded a Michelin Star this year! --------------------------------------------------------------- Egg Tostadas Forever [Tacos on a plate stuffed with beans and greens mixture, aji verde, fresh corn, and cilantro.]() Inspired by our trip, I feel like I could eat [these tostadas]() for breakfast, lunch, and dinner. They are so easy and are seriously hitting the spot. Also loving the low grocery requirements of this recipe after coming home to a mostly empty fridge. Crunchy, drippy, creamy and satisfying.
