I discovered that chilled soups have it all, bar the steam and burned lips, and are a refreshing way to keep cool over summer. Classics like gazpacho and cold beetroot borscht may come to mind first but many different vegetables and fruits work well served as a chilled soup and this is where their essential tastes can truly shine. Creamy avocado, juicy melon or cucumber, roasted tomatoes and capsicums are all good options.
