And you will too Dear {NAME}, I had a few friends over for brunch this weekend, and I wanted to offer them something special. So I went with one of my favorite healthy brunch recipes: Salmon and spinach frittatas. The eggs are loaded with protein, which helps to fill you up, give you energy, and fire up your fat-burners… The spinach is chock-full of fiber, calcium, iron, and a bunch of other important vitamins and minerals… And the salmon provides a healthy dose of B vitamins, potassium, selenium, and protein. The result: a delicious treat that is good for your heart, your bones, your blood pressure, and your brain, and can even help with weight management. Here’s what you need (serves 8): 1 tbsp extra virgin olive oil ½ onion, diced 1 6-oz bag baby spinach, chopped ½ tsp salt ½ tsp pepper 4 oz smoked salmon, finely chopped 10 omega-3 or pasture raised eggs 4 tbsp milk (or unsweetened, dairy-free milk) 3 oz fresh mozzarella cheese, cubed, or 3 oz shredded mozzarella Here’s what you do: 1. Preheat your oven to 325. Heat the oil in a skillet, then saute the onions until they’re soft, about 2-3 minutes. Add the spinach, and saute until wilted. 2. Add salmon, salt, and pepper, then remove from heat and let cool. 3. Combine the eggs and milk in a bowl, then stir in the cheese. Coat 8 8-ounce ramekins with cooking spray. Add 3 tbsp of the salmon mix and ¾ cup of the egg mix to each ramekin. 4. Put them on a baking sheet and bake for about 25 minutes. They’re done when a toothpick stuck in the middle comes out clean.
