{NAME}, I had some family over for Sunday brunch this weekend, and I wanted to serve them something special... So I went with one of my favorite healthy brunch recipes: Salmon & Spinach Frittatas. And I have to say… this recipe was a HUGE hit! Not just because it’s packed with protein, fiber, and essential vitamins — but because it’s just plain delicious. So today, I thought I’d pass this recipe along to you (feel free to print out this email, or just take a screenshot and save it for later).  Salmon & Spinach Frittatas (Serves 4) Ingredients: - ½ Tbsp extra virgin olive oil - ¼ onion, diced - 1 6-oz. bag baby spinach, chopped - Pinch of salt and pepper - 2 oz. smoked salmon, finely chopped - 5 omega-3 or pasture-raised eggs - 2 Tbsp milk (or unsweetened dairy-free milk) - 1 oz. shredded mozzarella Directions: 1. Preheat your oven to 325 degrees. Heat the oil in a skillet, then sauteé the onions until they’re soft, about 2-3 minutes. Add the spinach, then sauteé until wilted. 2. Add smoked salmon, salt, and pepper to the skillet, then remove from heat and let cool. 3. In a mixing bowl, combine the eggs and milk, then stir in the cheese. Coat 4 small ramekins with cooking spray. Add 3 Tbsp of the salmon mix and ¾ cup of the egg mix to each ramekin. 4. Put them on a baking sheet and bake for about 25 minutes. They’re done when a toothpick stuck in the middle comes out clean. I love how the flavors all come together so perfectly — but even more impressive is how fantastic these ingredients are for your health. The eggs are loaded with protein, which helps fill you up, gives you energy, and fires up your fat-burners… The spinach is rich in fiber, calcium, iron, and other essential digestion-boosting nutrients… And the salmon provides a healthy dose of B vitamins, potassium, and omega-3 fatty acids. The result? A delicious brunch that’s great for your heart, your bones, your blood pressure, your brain… and your waistline.
