No worries over weight gain, increased blood sugar, triglycerides, blood pressure. No leg edema, abdominal cramps, or diarrhea. No depression, moodiness, or crabbiness—except when aimed at your weird brother-in-law who keeps licking his fingers after touching everything. Makes 8 servings Ingredients: Crust: 1 1/3 cups ground pecans 2/3 cup ground golden flaxseeds 6 tablespoons butter or coconut oil, melted Filling: 8 ounces cream cheese, at room temperature 1/2 cup xylitol (see note) 2 eggs 1 can (15 ounces) pumpkin puree 1/2 cup canned coconut milk 1 teaspoon vanilla extract 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 1/2 teaspoon ground ginger 1/4 teaspoon ground cloves unsweetened whipped cream for garnish Directions: 1. Preheat the oven to 350°F. 2. To make the crust: In a medium bowl, stir together the pecans, flaxseeds, and butter or oil. Press into a 9" pie plate. Bake for 15 minutes, or until lightly browned. 3. To make the filling: In a large bowl, with an electric mixer on medium speed, beat the cheese and xylitol until smooth. Add the eggs, one at a time, scraping down the sides of the bowl after each addition. Add the pumpkin, coconut milk, vanilla, cinnamon, nutmeg, ginger, and cloves. Beat on low speed until well blended. 4. Pour into the pie crust. Place on a baking sheet. Bake for 45 minutes, or until a knife inserted in the center comes out clean. Place on a rack to cool completely. If desired, top with the whipped cream. Note: To prepare with stevia, omit the xylitol and coconut milk. Use 1/4 teaspoon liquid stevia and 2/3 cup heavy cream in the pumpkin mixture. Increase the vanilla to 1 1/2 teaspoons. Find more Thanksgiving recipes and tips on our [website](.
