What are your chilly weather go-to meals?

Call it pandemic overload, meal planning fatigue, or whatever you want. At my house, we have it. We’ve hit a few walls when it’s come to making dinner this past year and a half. A few weeks ago, I hit that wall again. It’s time to mix things up and introduce some new recipes into the rotation. I’m fascinated by what other people have for dinner, and I need fresh ideas as the weather turns cooler. It's something I turn to frequently when I need something easy and tasty, and it comes together so quickly I made it for myself for lunch yesterday in ten minutes flat.
