This question comes up for a lot of gardeners, and it’s quite understandable. If you have a shorter growing season, you have to start a lot of your vegetables indoors and transplant them. Lettuce, however, is a bit unique in that you don’t always have to wait for it to mature before you harvest it. Many varieties of lettuce will continue to grow even after you harvest leaves. Plus, lettuce seeds can germinate in temperatures as low as 40 degrees and seedlings can emerge in about a week. What about cuttings? That answer is a bit complicated. The short version is that yes, you can grow a new head of lettuce from harvested heads. There’s a big “But” in there, though.
