You can make a savory Pumpkin and Bean Soup, with white beans and just a pinch of cinnamon and nutmeg, or you can go sweet with a recipe like Pumpkin Muffins with Cream Cheese Surprise. This one’s fun because the cream cheese frosting is on the inside. They’re easy to make, too. All you need to do is combine your flour, baking powder, spices and salt, then separately combine your milk, pumpkin, brown sugar, melted butter, vanilla, and eggs. Mix that all together, spoon it into your muffin pan and bake for about 25 minutes. For the frosting, beat together the cream cheese, butter, confectioners’ sugar and vanilla. Then use a piping bag to squeeze the frosting into the muffins. The hardest part of this recipe is sharing them. For real. Oh! And both of these recipes smell heavenly! Harvesting Your Pumpkins Of course, before you can get to those delightful pumpkin recipes, you need to harvest your pumpkins. Once your pumpkins have a hard rind and a mostly dry vine, they’re ready to harvest. Check each pumpkin, though, as they will probably all ripen at separate times. To harvest them, just grab your pruning shears or a sharp knife and cut them carefully from the vine. Make sure to leave the stem, too, as that helps them keep a little longer.
