Cauliflower: Discover all you need to know to enjoy this delicious, cruciferous vegetable. [Food Gardening Network Preview]( December 24, 2021  [The Cauliflower of All Trades]( Discover all you need to know to enjoy this delicious, cruciferous vegetable. Gain full access to this premium collectionâand an entire Library of food gardening adviceâwith a [Charter Gold Membership in Food Gardening Network!]( Dear Gardener, It wasnât that long ago that the cauliflower was an afterthought in the vegetable world. You might find some carelessly tossed on a vegetable platter or over-boiled as a side at a family dinner. Thankfully, cauliflower is gaining recognition for the wonderful vegetable that it is. Sure, itâs rich in vitamins C and K and fiber. Yes, it can help reduce the risk of developing some types of cancer and it has anti-inflammatory properties. But mostly it just tastes great. And itâs an easy substitute for high-carb foods like rice and bread. In fact, you can use cauliflower to make pizza crust or Cauliflower Fried Rice. Interestingly, there are about 80 North American varieties of cauliflower. In the Plant Profiles section of the Cauliflower Collection, we feature five of the most common varieties. You can also find out what to do with all that wonderful cauliflower in the Recipes section of the collection. And there are feature articles where you can learn more about Growing Cauliflower in Containers (Yes! It can be done!), Problems with Cauliflower Heads and how to solve those problems, and plenty of tips for growing the somewhat tricky cauliflower. Cauliflower Plant Profiles The cauliflower, or cabbage flower, is in the Brassicaceae family along with cabbage, broccoli, Brussels sprouts, collards, kale, and kohlrabi. You can grow cauliflower in USDA Plant Hardiness Zones 2 to 11, depending on the variety. The vegetable likes lots of sun, but also cooler temperatures. That means a variety like the Flame Star Cauliflower, which is bred to handle warmer temperatures, would be ideal if you live in a warmer climate. I also might add that this variety is a gorgeous bright orange, so itâs a nice way to add some color to your garden and to your plate. Another beautiful variety is the Depurple Hybrid Cauliflower. Youâll get 6- to 7-inch heads of amazingly lovely purple florets on a white stem. Plus it has a flavor that hints at butter and nuts. For a more classic mild cauliflower flavor, and a variety thatâs more cold hardy, the Early White Hybrid Cauliflower is for you. This fast-growing choice matures in as little as 52 days and itâs a heavy producer. You can get all sorts of cool cauliflower info in the Cauliflower Collection, which is just one of more than two dozen special collections that comes when you join The Food Gardening Network. Cauliflower in the Kitchen There are a lot of good cauliflower recipes out there, including the five we have in the Cauliflower Collection, because whatâs better than grabbing a vegetable from the garden and using it in a recipe right away? A favorite is Cauliflower Fritters. These fritters are easy to make, and personally, I could snack on them all day! All you need to do is process your cauliflower in a food processor, then stir it in a bowl along with flour, eggs, baking powder, and Italian dressing seasoning. Heat up some olive oil in a frying pan, then drop this mix by the tablespoon into the hot oil. Fry for about 3 minutes on each side. Another super easy recipe is for Roasted Garlic Cauliflower. This one is seriously good, but then, you canât really go wrong with cauliflower, garlic, and Parmesan cheese. You can get the full instructions for both of these recipes, along with three more that celebrate the wonderful cauliflower when you join The Food Gardening Network.
