You can make a savory Pumpkin and Bean Soup, with white beans and just a pinch of cinnamon and nutmeg, or you can go sweet with a recipe like Pumpkin Muffins with Cream Cheese Surprise. This one’s fun because the cream cheese frosting is on the inside. They’re easy to make, too. All you need to do is combine your flour, baking powder, spices and salt, then separately mix your milk, pumpkin, brown sugar, melted butter, vanilla, and eggs. Mix that all together, spoon it into your muffin pan and bake for about 25 minutes. For the frosting, beat together the cream cheese, butter, confectioners’ sugar and vanilla. Pumpkins are self-pollinating: they produce both male and female flowers. Still, you’ll need some help from bees or other pollinators. If, however, you aren’t sure if the bees are getting to the pumpkin flowers, you can take a DIY approach. First, look for both male and female flowers. The female has a rounded fruit at its base that will eventually become the pumpkin. All you need to do is remove a male flower, then remove the petals. You can then brush the pollen-laden anther on the stigma. Easy as can be.
