But I’ll also share my own journey, from learning to love vegetables and the art of cooking from my family in France to earning three Michelin stars for my restaurant in the U.S. I’ll show you my approach to taking vegetables you already know—tomatoes, cabbage, mushrooms, leeks—and turning them into extraordinary dishes. Of course, I want this class to be a unique experience of its own, so it will be structured like a tasting menu. I’ll take you on a journey from your first course all the way to the last—and it’s going to be amazing. As we go, I’ll walk you through my techniques for blanching, roasting, grilling, gelling, and cutting—all the ways to cook seasonal vegetables while minimizing waste. I’ll also share my principles for layering, plating, and presenting with elegance so that you can bring all the love inside of you to your friends and family around the table.
