I can imagine the faint chirping of crickets as my grandfather prepared for his early morning fishing trips, and I know that I am not alone when I say my grandmother was the best cook. I’ll never forget how her kitchen smelled: like sugar and honey, greens cooking on the stove, vinegar and pork, and warm, nutritious goodness. This inspires me and causes me to ask deeper questions about the foods I was raised on. I’m very influenced by the women who raised me: my mother and both of my grandmothers. They taught me the foundation of Southern cooking and its cultural importance. Earlier in our country’s history, African American cooking wasn’t something that we could document—so our community relied on oral histories. In this class, I want to help keep our rich heritage alive and share it with you. It’s important and fascinating and incredibly delicious! I’ll show you techniques like braising, smoking, and pickling to add texture and depth to foods that are delicious, flavorful, and healthy. I’ll walk you through my versions of pork and collard greens, fish and grits, gumbo, and a lot more. If you’re like me, you love making people happy by sharing meals and stories.
