So for this [MF Insider]( I’m sharing three things I seriously can’t get enough of right now. Don’t knock ‘em til you try ‘em! #1. THIS creamy, dreamy Broccoli Spinach Curry Soup 🤤 One of my favorite West Coast restaurants called Zinqué served THE most mind-blowing, nourishing, OMG how-is-this-so-damn good soup. Since I sold my dream house in December and moved cross-country, I’ve been on a mission to recreate that magical soup experience here on the East Coast. After a few attempts, I’ve cracked the code. It comes together in minutes. It’s dairy-free, gluten-free, and vegan — but PACKED with flavor and nutrients. Plus, it’s completely gorgeous. Here’s my new favorite soup recipe:  [This creamy, dreamy broccoli spinach curry soup is my new favorite soup recipe.] [Photo Credit: [Simple Bites](  Ingredients: Directions: 5 oz of fresh spinach (a full bag or container) 1. Gently heat olive oil in a large pot. Add onion and garlic. Cook for about 5 minutes, until onions are translucent. 2 heads of broccoli, chopped 2. Add curry paste and cook for 1 minute. 1 onion, diced 2 cloves garlic, finely chopped 3. Add coconut milk, water, broth, salt, and pepper, and bring to a boil. ½ cup fresh cilantro 2 TBSP green curry paste   4. Add broccoli and cover with a lid. Cook until broccoli is tender — about 10-15 minutes (check softness with fork). 2 TBSP olive oil   5. Add spinach and cilantro and cook briefly until wilted. 1 cup veggie broth 2 cups water   6. Remove from heat and either carefully use a high-powered blender or an immersion blender to purée the soup to your desired consistency. 1 13.5 oz can organic coconut milk 7. Squeeze of fresh lime juice (half or whole, adjust to taste). 1 ¼ teaspoon Himalayan sea salt 8. ENJOY the best damn healthy soup on the planet. Keep in mind, I’m not a professional chef or food blogger, so this recipe comes as is. Please don’t ask about substitutions, portions, calories, macros... You’re resourceful and capable enough to figure that out on your own. This is simply a share from my food-loving heart to yours :) #2.
