One of these is the inclusion of large amounts of processed “vegetable” oils. Vegetable oils don’t actually come from vegetables – they come from seeds, grains, nuts, and beans. The agricultural revolution led to the mass production of these foods. And the processing of these crops into convenient foods led to a lot of waste products – including oils. Way back in the 1950s, people were told that these oils would improve health. However, that hasn’t panned out... Much of the research now shows that these unstable oils are a health hazard. Recently, researchers looked at the effect of a few of these oils on the testicle function of pigs. The results argue that consumption of these oils should be limited, particularly in men. [Can't see this image? Click on 'load images' or 'always allow images for this sender'] The animal research took place at the Kinjo Gakuin University College of Pharmacy in Nagoya, Aichi, Japan. The journal Food and Chemical Toxicology published the results. Vegetable oils are inherently unstable. They contain large amounts of omega-6 and omega-3 fats – also known as polyunsaturated fats. The unstable nature of these fats leads to all sorts of problems in the body. The fats can be somewhat stabilized through a chemical process called hydrogenation. This study looked at two natural vegetable oils (soy and canola) compared with a more stable chemically hydrogenated soy oil. The experiments were carried out on pigs. The researchers were interested in the different effects of these oils on the testicles of the animals. In animal research, pigs are one of the closest animals to humans. Only apes and monkeys are more comparable. “We examined the influence of dietary canola oil and partially hydrogenated soybean oil compared to soybean oil on the morphology and function of testes using miniature pigs.” They gave different groups of pigs different mixes of those three fats in their diets. At 18 months old, they sacrificed the animals and examined them for comparison. The researchers found little difference among the animals fed different fats – except regarding the testicles. “The scheduled autopsies revealed no abnormalities in histopathological examination of the major organs, except the testes.” The areas where sperm are created in the testicles had shriveled up in the animals fed the high vegetable oil (unstable) diets. “Atrophy of the seminiferous tubules were found in the soy and canola groups.” They compared these results to the results from the animals fed the more stable hydrogenated soy oil – which is processed to be more like saturated fat or mono-unsaturated fat. The cells that produce testosterone were deformed and swollen in a way that indicates detrimental changes (hyperplasia). “We found hyperplasia in the Leydig cells of animals in the soy and canola groups.” Sex steroids were lowest in the animals given natural, unprocessed soybean oil. “Plasma levels of sex hormones in the canola and hydrogenated soy oil groups tended to be higher.” The primary male hormones, testosterone into DHT, were much lower in animals fed on standard soy oil – versus the more stable hydrogenated version. “Testosterone into DHT were significantly higher in hydrogenated soy oil group than in the soy oil group.” Soy and canola oils have significant detrimental effects on testicular function, which can cause low levels of male hormones. “These results demonstrate that testes are morphologically and functionally affected by the dietary oils.” Many other vegetable oils are similar in that they contain lots of unsaturated fats. And it’s the same with fish oil. The hydrogenated soybean oil used in this study is less harmful, but I would not suggest consuming large amounts of it. Dairy fat seems to be the healthiest fat by far. Coconut oil and extra virgin olive oil are also healthy fats to consume in moderation. Unfortunately, unsaturated vegetable oils have been worked into many of the processed foods we find in the store today.
