Egg Beaters is probably the most common brand of these products and the label says “made from real eggs.” Most people think “this must be healthy.” But… They are also highly processed. And the health claims they make are questionable at best. Plus, many foods use these fake eggs — and they are very bad because they contain oxidized cholesterol and bad PUFA fats. The idea of products like this is that they have “less cholesterol” than eggs in shells… And somehow that is supposed to give us magical health benefits. This makes me CRAZY. And while I usually get frustrated with Big Pharma, I think there is just as much blame to go around for Big Food. Because they market these nonsense products – when eating REAL food that isn’t processed is almost always your best bet. Of course, real food can’t be sold for the same kind of margins that processed food is sold for… So we get a lot of cruddy processed food on our grocery store shelves. How can something humans have eaten for thousands and thousands of years be so TERRIBLE for us? Humans have probably eaten eggs for as long as there have been people. Eggs are an easy source of protein. And they are much easier to obtain than killing an animal for meat… Especially back when our species was still running animals off cliffs and beating them over the head to kill them. But… Now in recent years we’ve thought that eggs increase cholesterol in our system because they do contain a lot of dietary cholesterol. One egg contains approximately 200 mg of cholesterol. The problem with this notion is this incorrect question: “Do eggs make cholesterol higher?” And they might – at least for some people who carry the APOE4 phenotype… But it doesn’t matter very much if that higher cholesterol doesn’t cause any health problems. What really matters is this question: “Does eating eggs give you a higher risk of stroke, heart attack, or other diseases?” In the case of stroke, eating a moderate amount of eggs doesn’t increase your risk of actually HAVING a stroke at all… Not even if you have a gene that affects the metabolism of cholesterol in a “negative” way. “For most people, dietary cholesterol plays a very small role in affecting their serum cholesterol levels. However, in carriers of the apolipoprotein E (APOE4) phenotype 4 – which significantly impacts cholesterol metabolism – the effect of dietary cholesterol on serum cholesterol levels is greater.” In this study that went for 21 years (I love LONG-TERM studies), they showed that there was NO greater risk of stroke for people who eat eggs. “During a follow-up of 21 years, 217 men were diagnosed with stroke. The study found that neither dietary cholesterol nor egg consumption was associated with the risk of stroke – not even in carriers of APOE4.” What this means to me is that you should skip the fake Egg Beaters and just eat the real shell eggs. I think they’re better for you. That doesn’t mean you should eat a ton of fat in your diet, though. Based on the evidence, a moderate amount of eggs in your diet is fine and probably good for you. But what you want to avoid is eating a lot of fat – especially fats made of polyunsaturated fatty acids (PUFAs). These things are REALLY bad news. They include things like soy oil, canola oil, fish oil, and vegetable oil… They go rancid in your body and cause internal inflammation – which triggers all kinds of diseases. But even fats that are better for your body should be eaten only in moderation. The bottom line is that it’s WAY better to eat real eggs than to eat fake, processed egg substitutes. It’s also a good idea to limit overall fat intake – especially PUFAs. Eating real food in general is the way to go when it comes to eating. The less processed the better.
