Koreatown is full of tents all down both sides of the street and the mood is very festive among the diners. I was only there to go to the Korean grocery store with my mask and gloves, but it's nice to see people trying to enjoy themselves and have some Korean food with their friends. I hope to see that everything goes back to normal and this city is full of tourists again!    #  New recipe: Quick-fermenting radish water kimchi  This [dongchimi (Korean radish water kimchi)]( tastes sweet and sour with a deep kimchi flavor when fermented. It’s cold and refreshing! The radish slices are so crispy and the broth made with apples is naturally, mildly sweet and flavorful.  This recipe has 2 uses: one is as a side dish to rice, and the other is for making cold kimchi noodle soup, the next recipe below.   [How to make quick fermenting dongchimi](  #  Kimchimari-guksu  [Kimchimari-guksu]( is cold spicy noodle dish made with the quick-fermenting water radish kimchi (dongchimi) we made in the recipe above. It looks fantastic!   #  Interesting comments and tips from my YouTube viewers  [김경민 (Kim Gyeong-min)]( shared a great tip for using the anchovies left in the pot after making stock with them. Hundreds of people liked her comment and appreciated her for sharing the tip: "My cats love those leftover anchovies. Since all the salty stuffs come out after making broth it's a perfect snack for cats. I get broth, cats get snacks. I should eat more kimchi from today! ; )   #  Lilja's homegrown sprouts!  Lilja, living in Iceland, saw some recipes made with soy bean sprouts on my website but she couldn't find them. There was no Korean grocery store in her area. What did she do? She never gave up and [eventually she got what she wanted](! When I read her comment, I was so impressed by her passion for cooking that I couldn't help laughing! By the way, the soy bean sprouts lying side by side remind me of tall and slender ladies with long legs! : ) She said:   "Homegrown soy bean sprouts thanks to maangchi.
