I made [rice cake soup (Tteokguk 떡국)] to celebrate new years' day. I wish I could share some of this with all of you, so I took this photo just before putting the soup into bowls, garnishing and serving. The rice cakes in this soup are white and round, and symbolize money and pureness. So I wish your 2017 is full of financial success and good health and happiness! I didn't use all the water per the recipe, since it looked too wet after about half a cup of boiling water. It looked dry after 2 mins in the microwave though, so I put in another 2 tbsp of water before putting it back into the microwave for the second round. "Instead of kneading by hand, I rolled it into a ball and put it in my stand mixer for 10 mins on high. I had to hold the mixer down to keep it from flying off but the results were great! You won't believe it when you try this crispy, crunchy, cookie-like bread with a sticky sweet coating on the inside.
