His voice is so awesome! It reminds me of Richard Attenborough on the nature documentaries.  [Part 1 of the interview]( is all about my early days and how I started my YouTube channel. [Part 2 is about my new cookbook]( and my philosophy of food, recipes, and videos. I made kkakdugi (cubed radish kimchi) but with chayote which was available everywhere in Mexico. Ever since I developed this kimchi, I have been making it all the time and it's one of my new favorites! It stays very crispy all the time even though it's well fermented.  Chayote is not common fruit in Korea but these days Koreans love it because it has a lot of nutrients and antioxidants. One of my Korean readers let me know that it's being cultivated in Korea on Jeju island!   [Make chayote kimchi](   [New recipe: Jjapaguri with steak](  ​Let's get into a popular Korean movie together! This dish is featured in the Korean movie "[Parasite](" which is up for many awards this year! I posted this video recipe just a couple of days ago and already so many people have made it and love it! Yup yup! On Oscar night Sunday Feb. 9, I will make this for my friends while watching the Oscar awards. It doesn't matter if the movie gets an award or not, I want to be in a festive mood! : )    Donna's yummy galbijjim!  "Since we’re supposed to get snow tonight, I thought it was a perfect day to make Galbijjim!"  [It looks wonderful, Donna](! I'm sure this dish made you and your family happy and warm in cold winter!    Juicy, crispy, well-pressed-down chayote kkakdugi made by Michelle  Volla! I want to pick up one piece of this kimchi and enjoy chewing the crispiness! My reader Michelle Bailey [posted this photo on Facebook]( and said: "It looked so good I had to try it. We are living in Mexico and chayote is very easily accessible. It smells so good. I can’t wait 'til it ferments time get that beautiful sour taste. Thank you Maangchi for the chayote kimchi recipe!!"  Michelle, when I came back home from Mexico, I made chayote kimchi right away and now it's almost run out! I'm going to make it again soon. Chayotes are sold everywhere in New York City these days! : )   [Chayote kkakdugi recipe!](   Liam made kimchi for the first time but with chayote!  [Liam in France made this kimchi]( and told the story about it on Twitter: "Last week I saw a weird, new fruit at Carrefour and by coincidence Maangchi shared a chayote kimchi recipe so I bought the new, strange fruit and voilà ! My first ever homemade kimchi! Merci beaucoup, Maangchi!"  Yas! Congratulations! Now you can say: "I can make kimchi!"    My reader's homemade doenjang jjiage made her husband (plus me) cry!  I always get some touching stories from my readers and viewers and I sometimes laugh loudly when I read their messages and comments. But one of my Indian readers living in Nagaland with her Korean husband [left a short comment]( that made me cry!  "I cooked doenjang jjigae for my husband and he was so happy his eyes were in tears! He bought me your 1st book am learning how to cook Korean food from it. I love you so much!" I can imagine that maybe her husband hadn't tasted soybean paste soup for a long time. This soup is important for Koreans and part of our everyday meals, so tasting it again probably made him emotional. Me too!  Let me know if you have any funny stories or touching stories relating my recipes. I'd like to share them with all of my letter subscribers!   Seung's Lunar New Year's Feast!  So many of my readers are great at Korean cooking. Whenever I see the photos of the dishes that they make, I'm very impressed! This table setting was done by my reader Seung Lee for Korean New Year's Day. Yummy!    See you next time!  January was a busy month for me! Besides Serious Eats I was interviewed by [Wisonsin NPR's "Food Friday"]( which was wonderful! I talked about how easily you can make some Korean dishes even without special Korean ingredients, for example tuna pancakes.  Then a few people came to see the video for my tuna pancakes. How did I know? They left a comment [on my video](! I was so surprised to read the comment and so happy. I never know who is out there listening to my interviews!
