Link Between Coffee and Dementia Dr. Donald Weaver, a scientist in the study, explained that they discovered a link between coffee and the risk of developing a cognitive disability. He said they examined different types of beans and found that this particular brew proved beneficial in protecting against Alzheimerâs disease. The researchers at the Brain Institute found that phenylindanes, the product that gives coffee its bitter taste, helps keep Alzheimerâs at bay. It does this by preventing the protein build-up that causes this condition. Since roasting the beans for longer produces more phenylindanes, a dark roast will be better at protecting you from neurological decline. Dr. Weaver emphasized that dark roast coffee is not a silver bullet for Alzheimerâs, although the research was promising.
