Deciding on pie was the easy part. It's time to make some decisions about pie. That's easier said than done, I know. There are simply too many captivating options, and choosing among them can be excruciating. But unless you plan to bake six or more pies for Thanksgiving (in which case, can I come?), you'll have to choose between [apple](, [pumpkin](, [pecan](, and the other Thanksgiving classics. And before that, you'll have to decide whether you even want to do a classic at all. Last year the King Arthur Test Kitchen gave each of the classic Thanksgiving pies a modern twist, and those recipes are on my mind as I plan my upcoming Thanksgiving menu. I plan to diversify: one classic (like this [sweet potato pie](), one modern (this [Apple Butter Apple Galette](). Or maybe I'll modernize a pie simply by changing the crust. This [Whole Wheat Pie Crust]( gives pumpkin pies a nutty dimension, and this [Chocolate Crust]( is great for pecan pies. For the absolutely easiest option, I love Molly Marzalek-Kelly's [Melted Butter Pie Crust](, which comes together in minutes, doesn't have to be rolled out, and has a cookie-like texture when baked.
