Sarah Jampel Test Kitchen Manager For all the wonders of summer, there's one aspect that seems cruel (yes, that's a Taylor Swift reference): The fruit is excellent, but the butter is uncooperative. In my 80°F kitchen, it feels nearly impossible to keep butter cold for cutting into pie dough, and certainly impossible to roll that pie dough into a neat circle without it glomming to the counter. Both the butter and I would like to be in a pool. What's a hot weather baker to do? Meet your butter in its natural summer state: melted! It doesn't mean you can't have pie. Part of what makes our [Fast Summer Berry Pie]( (pictured above) so fast is the [Melted Butter Pie Crust](, which has a minimal chill time and can be pressed into the pan, no rolling pin required. Speaking of fast, our [Southern-Style Peach Cobbler]( comes together in about 10 minutes (20, if you count peeling the peaches). The simple cake batter is made with melted butter, so you just whisk it up, transfer it into the pan, and spoon the lightly sweetened peaches on top.
