Show a little summer love to chocolate. Sunday Recipe Inspiration Batch 503 David Tamarkin Editorial

Show a little summer love to chocolate. [logo]( Sunday Recipe Inspiration Batch 503 [Rich Chocolate Mousse ]( David Tamarkin Editorial Director Berries and stone fruit, [cobblers]( and [pies]( — I've got nothing but love for these beauties, and I understand that summer is their logical time in the, uh, sun. But every year around this time my heart goes out to chocolate. So many folks push it to the sidelines in the summer, which is not only unjust — it's unwise. Because what is more summery than a bowl of [chocolate ice cream](? And what is this [Rich Chocolate Mousse]( if not an approximation of ice cream, only more ethereal (and a little less cold)? I tasted this mousse — a brand new recipe — in various iterations while my colleague Sarah Jampel developed it, and each version was almost impossible to stop eating: very rich but also very light. And it's extra-appropriate for summer because it's made entirely on the stovetop. For those who need carbs with their custard (that's me), here's another new recipe: a [No-Bake French Silk Pie](. Unlike a classic chocolate cream pie, this one is lighter and fluffier — the chocolate is whipped to a cloud-like texture and folded into whipped cream. It's a perfect and not-too-heavy dessert for warm summer nights, and the press-in crust avoids the need for any oven action. (Seriously, who needs ovens in the summer??) But back to the stovetop. These [Fudge Waffles]( are amazing vehicles for ice cream, and they're made in a waffle iron. (Fact: No kitchen has ever been heated up by a waffle iron. And this [Coffee Chocolate Chunk Ice Cream]( goes from stovetop to ice cream maker to freezer to bowl; eating it is like jumping into a refreshing pool. Top your chocolate waffles with it and you'll have your coolest summer yet. David This week at King Arthur Does salt really kill yeast? [It’s complicated](. 7 ways to decorate cupcakes [like a pro](.
