For people like me, as well as anybody who has ever been intimidated by pie dough, Molly Marzalek-Kelly has a new recipe: this [Fast Summer Berry Pie](, which uses her ingenious new [Melted Butter Pie Crust](. This is a pie crust that has about a million things going for it. Thanks to the melted butter, it's quick and involves no rolling (you press it in the pie pan with your hands). It has that crisp cookie-like snap that I love. And the crust is bursting with flavor thanks to some [White Whole Wheat Flour]( and a powerful pinch of [Vietnamese cinnamon](. For the Fast Summer Berry Pie, the crust is filled with a mix of sweetened berries. They aren't sweetened too much, though — Molly absolutely nailed the ratio of lemon juice and sugar in this recipe, resulting in a beautifully bright dessert. The berries are then topped with an easy, gingery (or nutty — your choice!) crumb topping. (Another unpopular opinion of mine: I like crumb-topped pies better than double-crusted ones. Sue me!) Both the crust and the crumb topping in this recipe can be kept in your back pocket all summer and used for other pies. Consider them for other fruit pies, cream pies, and custard pies.
