I was struck dumb by the crisp and buttery crust, the mix of salty cheeses. But I was also confused. The pizza I'd eaten didn't look that different from other pizzas. "How is this so good?" I finally asked. Our friend Andrew Janjigian has the answer to that. In his [latest King Arthur blog post](, he describes everything that makes South Shore Bar Pizza so distinct — and so fiercely beloved by Massachusetts residents. It starts with that crust, which can rest for up to 48 hours and has a mix of butter and oil to make it both tender and crispy. The cheese is also crucial: it's a mix of cheddar, mozzarella, and, in Andrew's version, a little bit of parm. The cheese and the tomato sauce are spread edge-to-edge, leaving none of the crust exposed. Finally, there's the pan, which needs to have high sides in order to give the pizza its signature laced edges of crisp-chewy cheese and sauce. A round pan is traditional, but our recipe has an option for a [9 " x 13" cake pan]( that's been slicked generously with fat.
