Three of those variations have already dropped: the [Triple Chocolate Coffee Cake]( (made with chocolate milk!), the [Crumb Lover's Coffee Cake]( (we see you, streusel lovers!), and a [sprinkle](-studded [Birthday Coffee Cake]( that makes even a regular workday feel like a party. But buckle up, bakers, because we just released three more variations for spring. There's a Danish-inspired [Raspberry-Cream Cheese Coffee Cake](, which gets big fruit flavor from a simple stovetop jam. There's a [strawberry coffee cake with a matcha stripe in the center](; the strawberries roast as the cake bakes, concentrating their flavor and sweetness. And, perhaps my favorite of all three, a [Sweet Corn and Blueberry Coffee Cake](, made with [masa harina](, that brings to mind a bowl of berry-topped cornflakes. These fruit-forward coffee cakes depart from cinnamon-centric variations; they demonstrate just how far a great recipe can go. We love them, and we think you will, too.
