My loaves came out dense, or flat, or just not very flavorful. I was a new bread baker at the time, and I blamed myself for those unimpressive loaves, not the recipe. But after I switched to this recipe for [Pain de Campagne]( (also known as "Country Bread"), everything changed. My loaves came out tall and golden brown, with a nicely open (but not too open) crumb. Most importantly, my loaves now had flavor — the kind of flavor you only get when dough goes through a long, slow period of fermentation. Pain de Campagne is the go-to sourdough not just for me, but also for all of my colleagues here at King Arthur. We love it because it delivers incredible bread every time, and it's a hands-off recipe that's easy to fit into any schedule. The dough gets mixed and folded a few times, then sits untouched for up to 12 hours; after that, it's shaped, placed into a [trusty banneton](, and aged in the fridge for eight to 12 hours — whatever period of time fits your schedule best. I make two loaves of this bread every week, and by now I don't need to look at the recipe. I've even started to riff on the recipe, adjusting the ratio of [whole wheat]( to [bread flour](, sometimes even throwing a little [rye]( into the mix.
