The OTHER Thanksgiving Pie

Pizza is a holiday — and leftovers — lifesaver. Pizza can be a make-your-own situation on the day before Thanksgiving, and a beautiful vehicle for leftovers on the day after. A dough like our classic [Neapolitan]( makes it possible: Mix it (a 5-minute process) on Tuesday (or on Friday morning), let it rise for 12 to 24 hours, and portion it however you want.
