But, despite decades of stretching, baking, and eating, I find myself more inspired than ever. Just last week our new [Detroit-Style Pizza Pan]( kept me up at night, thinking of a pizza crust edged with frico and crunchy bites. (It's not atypical that pizza causes me insomnia.) And for almost a month now I’ve found myself hypnotized by a group of pizza pros on the small screen. I’m talking about Chef’s Table: Pizza, of course. The folks at Netflix who produced the Chef’s Table docuseries have taken their beautiful aesthetic and chef-forward focus and applied it to pizza in this new season, which premiered on September 7. Focusing on masters such as Chris Bianco, Gabriele Bonci, Ann Kim, and others, the series takes a deep look at the who, how, and why of pizza. It has inspired me in so many ways recently. This week, your homework is to let it inspire you. This week's assignment Let the best pizza makers in the world inspire you to make your own pizza at home. [Get the recipe]( 1. Make a personal pizza In one episode, Ann Kim brings her Korean background to the pizzeria she runs, baking leopard-spotted wood-fired Neapolitan-style pies topped with kimchi and fermented bean paste, and serving banchan to start the meal. To bake your own story, start with a [Neapolitan dough](, just like Kim does, and add a side of narrative. I come from the Ozark Mountains, so my personal pizza carries black walnuts, local apples, and smoky bacon. What’s your pizza say? [00 Pizza Flour]( [Get Yours]( [hero]( 2. Tie it to the land In episode two, Gabriele Bonci brings a farm- and season-focused approach to the pizza “in teglia” they make at Pizzarium in Rome, Italy. Bonci, a true pizza revolutionary, echoes the words of Wendell Berry, saying "Eating is an agricultural act. Period.” To Bonci, nothing is stronger than the tie between land and food. To follow his lead, put seasonal toppings like delicata squash and sage, enhanced by smoked mozzarella and a balsamic drizzle, on your [Detroit-style pie]( this weekend. Or finish it with a [vinaigrette]( made with whatever herbs remain in your garden. Regardless of the crust you choose, look for ways to bring the farm to your table. [hero]( 3. Serve it to your community At Chris Bianco’s legendary Arizona pizzeria, Bianco spins what some consider to be the best pizzas in the world. Grain-focused, Bianco adds stone-milled whole wheat and sourdough to his dough, producing a crust similar to our [Pizza Cubano recipe](. But Bianco isn’t just enamored of pizza; he’s also in love with building community. So, for the third part of your homework this week, make something you can share.
