Bakes we think about while falling asleep. [logo]( Sunday Recipe Inspiration with Kye Batch 448 [Chocolate Midnight Pie]( A few weeks ago, I revealed the elusive recipes that a few of our employee-owners love most — despite never being able to get their hands on them. We've either made our peace with the loss of the recipe or adopted another that's different but delivers the same spirit of the original long-lost love. I promised you I would share mine: these are the recipes that got away. The first is a recipe that landed me a job in a bakery: Dutch Dessert's Fudgy Chocolate Tart. Walking through a farmer's market, I was drawn to a slice of what looked like dark chocolate brownie pie. One bite of the rich, fudgy filling and buttery crust, and I was hooked. The secret recipe for their sought-after Fudgy Chocolate Tart is just that: a secret. Despite working there, I'll never know exactly what magic goes into their tarts. The closest I've tasted is our [Chocolate Midnight Pie](. [Espresso powder]( adds a depth of flavor that makes me think just maybe there's a touch of coffee in their original, too. Another recipe I think about while falling asleep at night (that's normal, right?) is a Jack Daniels Flourless Chocolate Cake that I fittingly had on my 21st birthday. Served at a small restaurant in Vermont that's now closed, the dessert was presented beautifully: raspberry coulis accompanied the black-as-night cake. Our [Flourless Chocolate Cake]( with a few tablespoons of Jack Daniels (or your favorite whiskey) added to the batter (and an extra glug added to the glaze) is just about as good as that birthday slice. Some longed-for recipes are from childhood, like the first recipe I ever tried to hunt down from its shifty keeper: "Shel Bars" from summer camp. Shel, the baker, liked to tuck all sorts of ingredients into her famous cookie bars to see who would notice. I swear one time there were tater tots in there. For a kid-friendly summer dessert, make our [Chewy Chocolate Chip Cookie Bars]( and slip in an unexpected ingredient that suits your fancy (I recommend [caramel chips]() — but please, no potatoes. I continued the pursuit of chocolate chip cookie perfection into college, too. Case in point, the "Pub Cookies" at St. Lawrence University (here we go, saints!). With a crackled surface and a soft and chewy center, these cookies are literally as big as your face. Over the years, I've realized their massive size is the main appeal, so you can make practically any [Chewy Chocolate Chip Cookies]( and scoop them generously (our [popover scoop]( is the tool for the job). And finally, another recipe I have longingly craved since childhood: Baba À Louis' cinnamon-raisin swirl bread. The bakery was halfway between my house and my grandparents, so a few times a year we'd pick up two loaves of their incredible cinnamon swirl bread. While the bakery is now closed, one bite of our [Multigrain Cinnamon-Raisin Bread]( and I'm transported to the backseat of my parents' car eating my second (or third) slice of Baba's bread. The defining ingredient in our recipe is the [Super 10 Blend](, a combination of whole grains that brings nutty, wholesome flavor but with a surprisingly light and kid-friendly texture. Despite your best effort, sometimes the recipes you crave most might always stay out of reach, guarded with a "secret recipe" label, or lost as businesses and bakers come and go. Keep baking and keep searching because boy, it's a delicious journey along the way.
