Our next Bake of the Week comes from Martin Philip: it's a [cornmeal-dusted sandwich loaf studded with pickled jalapeños and rife with cheddar](, and its creamy yellow color conjures the sun. It's a great bread, and it comes with a great story. In 2014, when Martin was running King Arthur's bakery, he spent a few days volunteering with Homeboy Bakery, a social enterprise that provides training to formerly gang-involved and previously incarcerated people. "They had a bread with pickled jalapeños and cheddar," Martin remembers. "They had been working on it for a while but didn't really like it until they started adding some of the juice from the pickling liquid." The idea of a [Jalapeño-Cheddar Bread]( would receive eye rolls in some artisan bakeries — it'd be seen as just too predictable. But perhaps because of that dose of pickle juice, Homeboy's loaf stuck with Martin long after he returned to Vermont. He started thinking about all the great local cheddar he had access to in Vermont, and soon he was working on his own riff on the bread. He added durum and cornmeal for some color. He dialed back the heat ("I didn't think I could sell the spicier levels that Homeboy had, even though I loved it"). And he shaped his version into a pan loaf, perhaps intuiting that while this bread would be great on its own, it would be even better in a grilled cheese. ([Martin has more to say about that here](.) [This recipe]( makes enough dough for two loaves — enough grilled cheese to feed a crowd! But the problem with all loaves is that, in theory, they have to cool before you slice into them. So Martin has built in another option: turn half of the dough into a loaf, and shape the other half into rolls. The theory is that when you eat a warm, melty roll right out of the oven, you'll have the willpower to wait a few hours for the loaf to cool.
