Yet that's exactly what so many of us do, morning after weekday morning. Cereal is fast and easy; but exciting? Worthy of anticipation? Nope. There's a better alternative, though, and thankfully it's nearly as hands-off as that box of cornflakes. With just a bit of weekend prep, you can enjoy a weekdays' worth of hot breakfasts, ones that will leave you not just with a full tummy but a smile on your face. Take one of my favorite pan breads, [Porridge Sandwich Bread](. Bake it once; enjoy it for days. Checking in at 85% whole grains means you feel virtuous eating it right from the first toasted bite. A smear of salted butter and your favorite homemade jam yields a wonderful iteration of the sweet-salty duo we've all come to appreciate. [Cinnamon Streusel Swirl Bread]( is another great candidate for toast: regular or (my choice) French toast. Soak fat slices of this cinnamon-infused bread in egg and milk, then plop them into a pan of sizzling butter. A couple of minutes later, you're enjoying a plateful of aromatic, crispy-soft "toast" rivaling anything you'd get at the local diner. Craving protein? Scramble an egg with some gochujang and chunks of cheddar. Then side it with a couple of [Never-Fail Biscuits](, the two-ingredient wonders my Southern nephews claim are "the best biscuits ever." Over the weekend, mix and portion the dough into biscuits and freeze. Then later in the week, bake as many or few biscuits as you like — just in time for breakfast. Do you feed your sourdough starter on the weekend? Don't feel guilty about the discard; turn it into [Sourdough Crumpets](, a soft-yet-sturdy base for egg-stuffed breakfast sandwiches. Just a few minutes of prep on Sunday yields a bagful of crumpets in your bread drawer, ready to slice, toast, fill, and enjoy Monday through Friday.
