I love their costumes! Sophie dressed as Owlette (a superhero from the TV show PJ Masks) and Oliver dressed as Maui (from the movie Moana).  Now, I’ve got a Halloween-themed health tip to share with you today. But first, some big news. So be sure to check it out when you get a chance, and please let me know what you think. :) Okay, onto today’s health tip. When I think of Halloween — I think of candy. I mean, those big bowls of chocolates are almost impossible to avoid! And while most candy is riddled with lots of sugar and unhealthy fats… You can still treat yourself to something sweet WITHOUT all those harmful extras. You just have to get a little creative! That’s why I want to share one of my go-to candy recipes — one that’s low in sugar, high in protein, and VERY tasty. I based this recipe on chocolate-covered peanut butter cups. We’ll talk about the health benefits in just a second. First, let’s take a look at the recipe.  Dark Chocolate Butter Cups Ingredients (makes 20 candies): - 20 peanut butter cup paper molds or mini muffin molds - 11.5 oz dark chocolate chips or chopped dark chocolate - 2/3 cup almond butter (no skins) or pistachio butter - 1 Tbsp arrowroot or tapioca powder - ¼ tsp cinnamon - ¼ tsp nutmeg - ½ tsp sea salt - 1 tsp local honey (optional) Instructions: - In a microwave-safe bowl, melt the chocolate in 20-second bursts, stirring between each burst. If you don’t have a microwave, melt the chocolate over a double boiler.  - Once melted, pour a bit of chocolate into each of the 20 paper molds, until each cup is about one-quarter full. Then, pop the cups in a freezer for the chocolate to harden.  - While the chocolate is hardening, mix the almond butter, arrowroot or tapioca flour cinnamon, nutmeg, sea salt, and honey.  - Once the chocolate is hard, divide the almond butter mixture into 20 teaspoon-sized balls that are slightly smaller than the paper molds. Flatten each ball and place them into the cups (centered).  - Top them with the remaining chocolate, making sure it covers the sides and tops of each almond butter ball thoroughly. If desired, sprinkle a few sea salt flakes over the top of each cup. Then, return them to the freezer until the chocolate sets.  - Once the chocolate sets, you can store these treats in the refrigerator for up to a week or in the freezer for about a month. (But I believe that they’re best shared with family, friends, and trick-or-treaters!) These candies taste just like the real deal. But without all the bad stuff. Here are a couple of the “healthy swaps” I made: HEALTHY SWAP #1: ALMONDS / PISTACHIOS Instead of lectin-heavy peanut butter, we use almond or pistachio butter for the filling. They’re both packed with protein, which can help you resist sugar cravings and stay fuller longer. They’re also high in fiber to support your digestion. And loaded with vitamin E, which helps keep your cells healthy. HEALTHY SWAP #2: DARK CHOCOLATE By using dark chocolate instead of milk chocolate, you can satisfy your sweet tooth and cut excess sugar. Plus, dark chocolate is packed with polyphenols — which have been linked to a healthy heart, brain, and skin. Of course, I still recommend enjoying these treats in moderation. But they’re a much better alternative to traditional candy, which is a BIG win in my book. :) And these little treats are a great option at Christmas, too — so make sure to print out this recipe.
