Fish - 2 servings - 30 minutes Oatmeal Crusted Fish with Spinach Simple flavors, simply done – a brilliant recipe that gives you everything you need! Fish - 2 servings - 30 minutes INGREDIENTS - 300 g white fish (cod, plaice, sole; fresh or frozen) - 60 g oats - 4 tbsp Dijon mustard - 400 g spinach (fresh or frozen) - 100 g cottage cheese or low-fat cream cheese - 6 tsp virgin olive oil - 1 pinch grated nutmeg - Fresh lemon juice - Unrefined salt - Black pepper DIRECTIONS - Preheat oven to 200℃ (390℉) (no convection). Line a baking tray with baking paper. - Grease fish filets with 2 tsp olive oil, then season all sides with salt and pepper. - Lay fish on baking tray skin side down. Spread mustard on the upper side, then sprinkle with oats, press gently, and drizzle with another 2 tsp olive oil. - Bake on a rack in the upper third of the oven for approx. 15 minutes until brown and crisp. - Heat the remaining oil in a pot. Cook spinach on medium heat for approx. 4 minutes until soft, then remove from stove and stir in cottage cheese or cream cheese and nutmeg. Season with salt and pepper to taste. Serve spinach with fish and drizzle with lemon juice.
