Vegetarian - 2 servings - 40 minutes INGREDIENTS - 5 eggs - 10 cherry tomatoes - Half zucchini - 1 bell pepper - 1.5 red onions - 2 tsp mixed Italian herbs - 250 ml water - 3 tbsp virgin olive oil - Unrefined salt - Black pepper DIRECTIONS - Quarter tomatoes and cut zucchini, bell pepper and onion into slices. In a bowl, whisk eggs. - Heat half of olive oil in a pot. Over medium heat, cook vegetables with Italian herb mix for approx. 3 minutes. Then add water and let simmer while covered for approx. 15 minutes, or until water has evaporated. Season with salt and pepper to taste. - In a pan, heat the remaining olive oil. Pour whisked eggs into pan and shake carefully until egg is spread evenly. Cook for approx. 4 minutes, or until set. - Remove pan from stove, turn omelet and leave in pan for another 2 minutes. - Put vegetables on one half of the omelet and fold.
